Toasted Baked Potato Slices
Be prepared these baked potato slices will go fast! They are a perfect side dish, easy to assemble, and they are REAL food. Not to mention they are so delicious you will lick your fingers.
I like to cut them in slices because I like the texture they get when they are baked that way – soft inside and slightly crispy on the outside.
- potatoes (regular or red, any will do!)
- olive oil
- sea salt
- black pepper
- fresh parsley, chopped
- grated parmesan cheese
Wash and slice potatoes. Preheat oven at 400 F.
In a large bowl combine olive oil, thyme, sea salt, black pepper, and paprika. Toss the sliced potatoes and cover well with spices and olive oil mixture.
Arrange potatoes in a single layer in foil lined baking sheets. Bake at 400 F for about 30-45 minutes, depending.
With about five-ten minutes, sprinkle parmesan on the potatoes.
Serve, and sprinkle with chopped parsley for garnish and more parmesan cheese if desired.
