No Bake Pumpkin Pie

Seriously, the easiest NO BAKE pumpkin pie. Not to mention, gut friendly and delicious!

 

This Filling is easy to digest, high in protein, no refined sugar, gut friendly, and vegan friendly! 

 

Filling:

1 can of pumpkin puree

2-3 tablespoons of lite coconut milk

1 tsp of pumpkin pie spice

1 tbsp of collagen powder (further food mkfitness10)

1 scoop unflavored pea protein powder

Dash of cinnamon 

 

Mix together in bowl. Again, I eyeball most of my recipes :) so have fun with it!

 

Crust:

Oats

Cocoa Powder

Flaxseed

Unsweetened Coconut Flakes

Honey

Vanilla Extract

Pecan Butter

 

Blend together, make sure it's nice and thick, then layer on the bottom of a pan. Then add the filling. Next pop in the fridge and chill.

 

Once ready to eat, top with finely chopped walnuts and unsweetened coconut flakes. Have I ever mentioned I love texture? :) 

 

ALSO, for me, I actually like to make a bunch of personal sized pies using small square or rectangular containers about an inch in height.
